Today I though I share with you my dairy free rice pudding. Its simple to make and do not require a lot of ingredient and faffing about. Perfect if you want to have something that is dairy free or if you are vegan/ vegetarian. The great thing about rice pudding its that once they are ready to eat you can add all the topping you wish on top of it from: fresh fruits, to chocolate spread, honey, seeds, nuts etc. You can get as creative as possible and also it could be a substitute from your usual breakfast if you fancy something a bit different.
Side note: If you want to have cow milk instead of Oat or other free dairy product the quantity would remain the same for the liquid content.
- 100gr pudding rice
- 50gr sugar
- 700ml Oat milk ( or any dairy free milk of your choice)
- a pinch of grated nutmeg
- A pinch of grated Cinnamon (or add more to taste)
- Optional: Vanilla extract 1 tsp
1st thing first pre-heat your oven to about 150C or Gas 2.
Wash the rice with cold water and drain well.
Butter (use dairy free butter) an 850ml heatproof baking dish.
Then tip in the rice and sugar ad mix well together. Then add the milk of your choice.
Sprinkle the nutmeg over and cinnamon ( but obviously you can add or remove any spices depending of your personally taste). Then mix well.
Cook for about 2 hours (but depending of your oven you may need to length to an extra 15-30 minutes.) or until the pudding wobbles ever so slightly when shaken.
Let it cool (as better to eat cold). Then get creative with your topping from fresh fruits, jm, honey, chocolate etc.
Rice pudding is something that my mum used to make us as dinner during colder months and over the weekends! When my sisters and I got older, we somehow stopped eating it; but now, when I saw the photos, I started craving it so badly :D I'll have to make it soon, thanks Marie! ❤
